Would there be any merit in joining the island to the work surface of the hob and giving yourselves a bit more work surface and another base cupboard? (on the left as you look at the hob). That is rather dead space and does not interfere with the hob,sink, fridge triangle which is always the key to a successful layout. I'll let your mother see it for her to comment too.
